Sunday morning when I woke up, it was 7:15 and everyone else was snoring away. I left them like that. I, however, take my pajama clad self out under the awning to kick back in a zero gravity chair with my coffee and a book I have been waiting weeks to read!!
I am reading Shady Grove by Janice Holt Giles, a new friend in the campground recommended it to me. I am 3 chapters in and I can already tell you it will be in my top 10 favorite books! You can find it (here.)

Birds are chirping, the sun is shining, the temperature is perfect and there is a slight breeze…. the perfect morning to make biscuits & gravy. So I bring everything I need outside and biscuits & gravy is what I make.
The whole time I think of my grand-mother, boy she would be shocked to see how much in love with cooking I am now. Just before Chris and I married she tried to teach me to cook.. I was horrible at it. “Sarai Jane, you better marry a man who can cook, or a rich man who can hire you a cook.” Then she would laugh.. her little shoulders bouncing, head back and leaned to one side. At the time I was offended but now I would give up everything to hear that again.

I make the gravy in my Instant Mini 3 quart and the Instant Vortex Air Fryer Oven. I honestly could not live with my Instant Pot or this Air Fryer Oven… once you use them you will be hooked. Is it a complicated breakfast no, is it “fancy” no, but it is not intended to be. It is just breakfast. Once it is all done and ready.. I rouse my snoring bunch.. yes they all snore! Hannah will swear she does not but she does.
Everyone gathers their food and sits down at the picnic table. The next 20 minutes are my favorite part of the day. We talk, we laugh, we plan and we just enjoy each other. No one complains there are no eggs, bacon, or toast. We just enjoy the simple breakfast, each other and our surroundings.
They are all still sleepy but I am wide wake and counting my blessings.



One thing I have learned during this downsizing and prepping for full time RV life… this is what matters. These simple Sunday Morning Breakfasts together.
