Is there any meal more southern than Mac and Mators? Probably not. We love to enjoy this during our camping trips or just a quick meal in the off seasons at home. Here is my recipe for the pressure cooker.What you will need: 4qt – Pressure Cooker 2 cups macaroni, uncooked 1 – 14.5 ounce can diced tomatoes (I prefer Hunts) 1 – 14.5 ounce can whole tomatoes in juice ( I prefer Hunts) 4 cups of water Salt & Pepper to taste
In your pressure cooker put your diced tomatoes, whole tomatoes, and water. Stir.
Stir in your macaroni. (You can add salt and pepper here. I prefer to allow the diner to do this to their own taste.)
Close up pressure cooker, set release value to airtight and set to cook 4 minutes under pressure.
When it has stopped cooking allow it to NATURALLY release pressure. If you release the pressure manually, the soup will and tomatoes will come out the release value.
Serve (preferably with cornbread) and enjoy!
