Is there any meal more southern than Mac and Mators? Probably not. We love to enjoy this during our camping trips or just a quick meal in the off seasons at home. Here is my recipe for the pressure cooker.
What you will need: 4qt – Pressure Cooker 2 cups macaroni, uncooked 1 – 14.5 ounce can diced tomatoes (I prefer Hunts) 1 – 14.5 ounce can whole tomatoes in juice ( I prefer Hunts) 4 cups of water Salt & Pepper to taste
Step one:
In your pressure cooker put your diced tomatoes, whole tomatoes, and water. Stir.
Step Two:
Stir in your macaroni. (You can add salt and pepper here. I prefer to allow the diner to do this to their own taste.)
Step Three:
Close up pressure cooker, set release value to airtight and set to cook 4 minutes under pressure.
Step Four:
When it has stopped cooking allow it to NATURALLY release pressure. If you release the pressure manually, the soup will and tomatoes will come out the release value.
Step five:
Serve (preferably with cornbread) and enjoy!
I have never heard of Mac n Maters before 😀 I am from Michigan.
I was just thinking that fresh sliced grape tomatoes & chopped fresh parsley & thin sliced Vidalia onion might be good to add on the side?(although, not authentic to your recipe)
Yes it is! I have not added the fresh tomatoes, but I do love to add the onion and parsley.
